INGREDIENTS
4 lobster tails (thawed)
1/4 cup butter melted
3-4 garlic cloves minced
1/2 teaspoon sweet or smoked paprika
1 teaspoon parsley
1 teaspoon thyme
1 teaspoon rosemary
1/2 tsp salt
1/2 tsp pepper
INSTRUCTIONS
Put the oven on the broil setting.
Start by preparing the lobster. Using kitchen shears butterfly
the tail by cutting the TOP of the tail down the center, starting
at the front, and stopping before the last section of the tail.
Loosen the meat by turning the tail over, and sliding a finger
between the meat of the tail and the outer shell. The tail should
be easily removable at this point but do NOT remove. Turn the
tail top-side up and gently pull the lobster meat upward, so just
a little is emerging from the cut you made. There are "flaps"
to this part, bend them back so they cover the edges of the cut
shell. Salt and pepper the meat and set on a baking sheet.
In a small bowl whisk together the melted butter, garlic, and
spices. Spread generously on the tops of each tail.
Broil for about 8-10 minutes or until the meat is opaque and
lightly brown on the top. Don't over-cook!
Serve immediately with some clarified butter.
