A general mexican sauce I've used for various things. Great for fajitas of course. Use it on veggies, beans, meat, seafood .. endless possibilities.

Makes enough for about 1# meat

3 tablespoons fresh lime juice
1 to 2 tablespoons adobo sauce (from 1 can chipotle peppers in adobo sauce)
1/4 cup olive oil
3 tsp cumin
1 tsp garlic powder
1 tsp oregano
1 teaspoon salt

Mix and use. For meat, let met marinade 30 mins or so, then remove meat and cook mostly through, add remainder of sauce from bowl and continue cooking until heated and slightly thickened.
