My kids love this simple
pasta dish from Gammy's (Grandma's) house.
Ingredients
1 lb. Pasta (cooked al dente)
2 Tbsp Olive Oil
3 Tbsp Pine Nuts
3/4 cup raw mushrooms, cut into quarters
2-3 Tbsp pesto
3/4 cup fresh spinach
3/4 cup cherry tomatoes, halved
Directions
Heat olive oil in large pan.
Add pine nuts, mushrooms, and pesto.
Stir fry until mushrooms are hot but firm.
Add pasta, stir until heated through.
Add tomato and spinach. Remove from heat and toss until spinach
is wilted.
Sprinkle with grated parmesan cheese just before serving.
