Homemade Hotpockets - these are pizza flavor, but can be adapted for pretty much anything. Remember not to overfill, as the pocket space is limited. Very finely dicing the fillings can help with this.

Makes 6

Ingredients

Puff Pastry - 2 sheets (1 box)
6 Mozzarella cheese slices
20-30 small pepperoni slices - finely chopped
5-6 white mushrooms - finely diced
1/4 white onion - finely diced
1/4 bell pepper - finely diced
8-10 basil leaves - finely chopped
1 cup pizza sauce
1 egg, beaten

Directions

Preheat oven to 425 degrees.

Assemble on a parchment-lined baking tray. Put cheese on bottom, then sauce, then toppings.

Rub a bit of egg mix onto the edges and seal with fork. Poke steam vent holes in top crust. Brush some egg mix on top.

Bake at 425 for about 12 minutes or when crust is golden brown.
