A New Years Day tradition
is to have black-eyed peas. This is a great dip for chips for the
football games.
Note: Should be made a day or two ahead of time for best flavor.

Serves: Lg. Party Bowl (7 cups of dip)
Ingredients
3 cans (16 oz each) black-eyed peas
1 cup diced yellow bell pepper
3/4 cup diced sweet onion
3/4 cup diced jalapeno peppers
1/4 cup diced pimento
1 1/2 tsp minced fresh garlic
8 oz italian salad dressing
Salt and pepper to taste
Tortilla chips for dipping Preparation
Mix all ingredients except chips in large bowl. Mix lightly to
combine. Cover with plastic wrap and chill until 1 hour before
serving.
To serve, drain most of the liquid off. Serve in a wide bowl suitable
for dipping. Goes great with tortilla chips. |
