A work in progress as well,
though this version is pretty good. Not as spicy as it could be
so double the chile if you need a bit more heat.
Ingredients
1/2 cup chopped onion
1 clove garlic, minced
1 tablespoon minced fresh ginger root
2 Tablespoons vegetable oil
1 tsp Hot Sesame Chile Condiment (1/2 jalepeno if not)
1/2 cup Peanut Butter (Creamy)
1/2 cup Coconut Milk
3 tsp Rice Vinegar
1/4 cup tamari
3 tablespoons honey
1/4 cup fresh basil leaves, cut into thin strips
Directions
In a saute pan, heat oil over medium heat. Add onions, and saute
until tender. Add garlic, jalapeno pepper, and ginger; cook and
stir for 2 minutes.
Stir in peanut butter, coconut milk, tamari, rice vinegar, and
honey until smooth. Add shredded basil. Heat through, and remove
from heat. |
